Lencsefőzelék kolbásszal (Lentil Stew with Fried Sausages)

This is traditionally eaten on New Year's Day

400 g grey/brown lentils
2 tablespoons flour
enough oil to mix with the flour for a roux
100 ml sour cream
1 teaspoon of finely grated onion
complete rind of 1/2 lemon
salt to taste
wine vinegar or lemon juice to taste
150 g of continental sausage (Hungarian or Polish paprika sausage, but chorizo is also appropriate.)

Soak the lentils in water overnight. Cook them in just enough water to cover them; add salt and the lemon rind and boil until soft. Remove the lemon rind and thicken the stew with a roux made from the oil, flour and onion. Add sour cream and thin slices of sausage.
